Food Pairing

Food Pairing Suggestions

Here are a few serving suggestions and pairing ideas to help you get the most from this dessert wine, whether you’re enjoying it with food or simply savouring it on its own.

Dark chocolate tarts, cherry‑based desserts or nut‑accented pastries amplify the wine’s Morello cherry intensity and cinnamon warmth. These desserts echo its fruit‑driven, modern style.

Aged cheeses provide a refined counterpoint to the wine’s floral lift and saline finish. Their savoury depth enhances the Banyuls’ mineral structure.

Rich beef dishes, especially those with caramelised edges or sweet‑savoury glazes, pair seamlessly with the wine’s cherry richness and soft tannins, creating a bold, indulgent match.

M. Chapoutier

M. Chapoutier is one of France's most respected wine producers, with a history dating back to 1808 in the Rhone Valley. The family-owned estate came under the leadership of Michel Chapoutier in 1990, whose vision transformed the winery into a global benchmark for biodynamic viticulture while remaining deeply rooted in the traditions of the Rhone.

Driven by a philosophy that great wine is born in the vineyard, Michel Chapoutier has championed organic and biodynamic farming across the estate's vineyards, believing that healthy soils and careful stewardship are essential to expressing the true character of each terroir. This commitment has earned M. Chapoutier international recognition for producing wines of exceptional purity, balance and longevity.

Today, the house owns and manages vineyards across some of the Rhone Valley's most prestigious appellations, while also producing wines from carefully selected regions throughout France and internationally. FAQs For M. Chapoutier Bila Haut Banyuls Rimage

How is this wine made?

Unlike traditional Banyuls, which undergo long oxidative ageing, the Rimage style is crafted for youthful vibrancy. Aged 8 months in vat, preserving fruit purity, then 3 months in bottle to integrate tannins and aromatics. This approach results in a fresher, more modern expression of Banyuls.

The schist‑based vineyards of Banyuls contribute natural minerality and saline lift. Chapoutier’s meticulous approach, hand harvesting, gentle extraction and controlled fermentation ensures balance between sugar, alcohol and acidity, creating a fortified wine of exceptional finesse.

What does "Rimage" mean?

Rimage refers to a youthful style of Banyuls that is bottled relatively early to preserve its deep colour and vibrant fruit flavours.

Is Banyuls the same as Port?

No. Although both are fortified wines, Banyuls is produced in southern France while Port comes from Portugal's Douro Valley. Banyuls is usually made mainly from Grenache and often displays fresher red fruit and Mediterranean influences, whereas Port is produced from indigenous Portuguese grape varieties.

Is this wine ready to drink?

Yes. This style is designed to be enjoyed while young to showcase its vibrant fruit and freshness. It can be enjoyed immediately after purchase without additional bottle ageing.
