White Port

White port is made from white grapes in Portugal's Douro Valley and comes in two main styles, dry and medium sweet. It is one of the most versatile and refreshing port styles, equally at home served well chilled as a summer aperitif or used as the base for one of the most enjoyable long drinks you can make at home.

The classic way to serve white port is as a white port and tonic, or P&T as it is known in Portugal. Fill a large glass with ice, add a generous measure of well-chilled white port, top with good quality tonic water, add a slice of lemon and a sprig of mint. The result is crisp, refreshing and far more interesting than a standard gin and tonic. Dry white port from Kopke, Taylors Chip Dry and Ferreira Branco Seco work particularly well in this context.

What is white port?

White port is a style of port wine made from white grape varieties rather than the red varieties used for ruby and tawny port. Produced in Portugal's Douro Valley, it comes in dry and medium sweet styles, with the dry style being the most popular for modern drinking. Aged versions including 10, 30 and 50 year old expressions from Kopke offer extraordinary complexity that rivals aged tawny port in depth and character.

What is the difference between white port and gin in a tonic serve?

White port and tonic has become increasingly popular as an alternative to gin and tonic, and for good reason. White port brings a softer, rounder character than gin, with notes of fresh fruit, almonds and a natural sweetness from the Douro Valley grapes. At around 20 per cent ABV it is lighter in alcohol than most gins at standard measures, and the lack of botanicals means the flavour is cleaner and more food-friendly. For those who find gin and tonic too sharp or juniper-forward, white port and tonic is a natural and genuinely enjoyable alternative.

How should white port be served?

White port should be served well chilled at 6 to 10 degrees Celsius, similar to a crisp white wine. Keep it in the fridge for a couple of hours before serving. What is the difference between dry and sweet white port?

Dry white port such as Taylors Chip Dry, Ferreira Branco Seco and Quinta Do Noval Extra Dry has very little residual sugar and works best as an aperitif or in the white port and tonic serve. Sweet white port such as Kopke Lagrima and Krohn Lagrima has a richer, more honeyed character and is better suited to serving with desserts or enjoyed slowly after dinner. Both styles should be served well chilled.

How long does white port last once opened?

White port keeps for three to four weeks once opened, stored in the fridge with a good stopper. This is longer than most table wines due to its fortification but shorter than tawny or ruby port. What food pairs well with white port?

Dry white port pairs beautifully with seafood, smoked salmon, light tapas, olives, almonds and goats cheese. Sweet white port works well with fruit tarts, soft cheese and light desserts. The classic Portuguese pairing is dry white port with presunto ham and almonds before dinner. White port and tonic is also an excellent accompaniment to any summer food, from grilled fish to antipasti.
