Gonzalez Byass Noe VORS 30 Year Old Pedro Ximenez Sherry Overview

Tasting Notes

Gonzalez Byass Noe VORS 30 Year Old Pedro Ximenez Sherry

This is one of the most prestigious expressions in the house’s range, drawn from an extensive solera system where wines are aged for a minimum of three decades. Crafted from sun-dried Pedro Ximenez grapes, it represents the pinnacle of traditional oxidative ageing in Jerez, delivering extraordinary concentration, depth and complexity while retaining remarkable smoothness.

This is a rare, contemplative sherry designed for slow appreciation, showcasing the richness and harmony that only long barrel ageing can achieve.

Tasting Profile:

  • Appearance: Intense, iridescent ebony with a dense, syrupy texture in the glass.
  • Nose: Highly concentrated and expressive, with powerful aromas of dried figs, plums and raisins. Layers of espresso, cocoa, toffee, and warm baking spices emerge with time, creating a deeply complex aromatic profile.
  • Palate: Exceptionally smooth and velvety, with a rich, unctuous texture. Flavours of dried fruit compote, molasses, coffee and dark chocolate dominate, supported by subtle spice and a refined oxidative nuttiness. Despite its richness, it remains balanced and lifted.
  • Finish: Very long and warming, with lingering notes of fig, cocoa and roasted coffee beans.

Occasion & Buyer Profile

Designed for special occasions rather than casual drinking, Noe is a natural choice for celebratory moments, refined desserts, and thoughtful luxury gifting. It appeals to experienced sweet‑wine drinkers and confident gift buyers who value long ageing, exceptional richness, and the sense of occasion a truly rare Sherry brings.

A brief look at the producer’s heritage and winemaking approach.

Gonzalez Byass

Gonzalez Byass is a landmark Spanish wine and spirits producer based in Jerez, Andalusia, founded in 1835 and still partly family-led today. Built on the success of its world-famous Tío Pepe Sherry, the company has played a major role in shaping the reputation of Jerez wines globally.

Over time, the group has expanded far beyond Sherry, developing a portfolio that includes brandy, still wines and international wineries. Despite its global reach, Gonzalez Byass remains closely tied to its historic bodegas in Jerez, where traditional ageing methods and solera systems continue to define its style and identity.

FAQ's For Gonzalez Byass Noe VORS 30 Year Old Pedro Ximenez Sherry

How is it made?

The grapes are partially sun‑dried to concentrate sugars before being pressed, fermented and fortified. The young wine enters the Nectar solera, where it begins its ageing journey and develops early richness and texture.

A proportion is then transferred to the Noe solera, where it matures for a minimum of 30 years. This long oxidative ageing in seasoned oak casks creates the wine’s ebony colour, syrupy texture and extraordinary aromatic complexity.

How should I store this sherry?

Store the bottle upright in a cool, dark place at a steady 12–16°C, away from heat and light. PX sherries are stable and can be kept for many years unopened. Once opened, it remains fresh for 2–3 months if sealed and stored upright.

What's the best way to serve this wine?

Serve slightly chilled at 12–14°C in a small wine glass or dessert‑wine glass to highlight its aromatic depth and silky sweetness.

Is it suitable for gifting?

Yes especially for collectors and lovers of rare sweet wines. A free gift message can be added at checkout.
