Gonzalez Byass Matusalem VORS 30 year old oloroso sherry dulce is a premium sherry from Gonzalez Byass, a Spanish winery located in Jerez. The winemakers makes the sherry using the traditional solera method. A process that involves ageing the wine in a series of casks. Blending a portion of the oldest wine with a younger wine to create a consistent flavour profile.
Produced in very small quantities. Matusalem is made by enrichment of a dry oloroso sherry with 25% pedro ximenez. As well as the additional ageing in its own solera.
