Food Pairing

Food Pairing Suggestions

Here are a few serving suggestions and pairing ideas to help you get the most from this wine, whether you’re enjoying it with food or simply savouring it on its own.

Pairs beautifully with walnuts, blue‑veined cheeses and richly flavoured options such as Stilton, Roquefort, Gorgonzola and Saint Agur. The wine’s ripe fruit and generous structure complement buttery textures and savoury depth, while its floral lift enhances earthy, nut‑based dishes and aged cheeses with natural piquancy.

For sweet pairings, choose desserts that echo the wine’s dark‑fruit richness: flourless chocolate cake, spiced plum tart, cocoa‑dusted truffles or roasted figs with honey. The wine’s freshness and herbal nuance also suit dried apricots, fig cakes and winter puddings built around warm spices.

This vintage is ideal for Christmas entertaining, winter celebrations, milestone birthdays and premium gifting. It appeals to collectors seeking a young, expressive Taylor’s release, buyers who appreciate structured, age‑worthy fortified wines and anyone looking for a bottle with decades of evolution ahead.

How is this Port made?
  1. This Vintage Port is crafted using traditional methods that preserve intensity, purity and structure.
  2. Grapes from the estate’s top vineyards are hand‑picked at optimal ripeness, ensuring only the healthiest, most concentrated fruit reaches the winery.
  3. On arrival, the grapes are foot‑trodden in granite lagares, a time‑honoured technique that provides gentle yet thorough extraction of colour, tannin and aromatics without bitterness.
  4. Fermentation begins naturally and is closely monitored until the ideal moment, when it is stopped by adding high‑quality grape spirit. This fortification preserves the wine’s natural sweetness and locks in its vibrant fruit character.
  5. The young Port is then aged in Taylor’s historic cellars, where it rests in large oak vats until bottling. Because Vintage Port is bottled unfiltered, it retains its full depth, ageing potential and vineyard expression, allowing it to mature gracefully for decades.
What made the 2023 growing season unique?

This Port is shaped by a dramatic and fast‑moving growing season in the Pinhao Valley. After the extremely dry 2022 vintage, the winter rains of 2023 replenished the region’s depleted water reserves, setting the foundation for healthy vine growth. A hot, early spring accelerated the season, while a challenging May-June period brought both welcome rainfall and heightened mildew pressure.

The summer saw contrasting conditions: moderate July temperatures followed by an intense August heatwave that pushed ripening forward, particularly in mid‑altitude vineyards. September brought alternating bursts of rain and clear weather, creating a race to harvest pristine fruit at optimal maturity.

What makes it Sentinel Port special?

Sentinels Vintage Port is unique because it’s crafted from a blend of wines sourced exclusively from Taylor’s four historic estates - Terra Feita, Junco, Casa Nova and Eira Velha. Each located within the original 1756 demarcated Port region. All four vineyards were awarded feitoria status, the highest classification in the Douro, reserved for the most exceptional sites.

The name “Sentinels” honours the granite marcos de feitoria pillars that still stand along the old boundary lines. Between 1758 and 1761, 335 of these stone markers were placed to guard the region’s most privileged terroirs, many of which include Taylor’s own properties.

Each estate contributes something different - altitude, aspect, sunlight, wind exposure and grape varieties. But they share the deep, powerful, fruit‑driven character of the Pinhao Valley. The result is a Vintage Port that is both harmonious and complex, with every vineyard adding its own layer of depth, structure and aromatic richness.
