Tasting Notes

Zuccardi Arauco Extra Virgin Olive Oil

Made from Argentina’s emblematic Arauco olive variety, this extra virgin olive oil reflects the distinctive character of Mendoza’s olive-growing region. The olives are picked as they begin to ripen, preserving a fresh, green profile with intense fruit flavours. Aromatic tomato and freshly cut grass lead into apple and herbal notes, supported by a pronounced yet balanced bitterness and spice.

Tasting Profile:

  • Appearance: Green-toned, reflecting its fresh, early-harvest style.
  • Nose: Expressive aromas of tomato and freshly cut grass.
  • Palate: Complex green fruitiness, with apple and herb notes alongside medium to medium-high bitterness and spice.
  • Finish: Clean and lively, with lingering green fruit and a gentle peppery edge.
Food Pairing

Food Pairing Suggestions

Here are a few serving suggestions and pairing ideas to help you get the most from this olive oil.

Grilled aubergine with garlic, parsley and lemon is a superb match because the oil's tomato and herb notes complement the smoky vegetables beautifully. The natural bitterness adds structure, while the peppery finish lifts every bite. Drizzle generously after cooking for maximum flavour.

Aged Manchego with toasted almonds and artisan bread makes a simple but impressive pairing. The intense fruit character balances the savoury cheese, while the spice adds extra complexity to the finish. Serve at room temperature to fully appreciate the oil's aromas.

A brief look at the producer’s heritage and commitment to the region.

Zuccardi Olive Oil

Zuccardi produces extra virgin olive oils in Maipu, Mendoza, at the foothills of the Andes in western Argentina. The region's dry climate, strong sunshine and marked temperature differences between day and night create distinctive conditions for olive cultivation.

The family manages its own olive groves, growing a range of varieties suited to the local environment. Arauco, a traditional South American cultivar, is particularly important to the collection. The range also includes varieties such as Picual, Coratina, Frantoio and Genovesa, each offering its own balance of fruitiness, bitterness and peppery character.

The production approach centres on varietal expression. By keeping individual cultivars distinct, the team can showcase the differences between them rather than relying solely on a blended oil. Arauco is known for its pronounced, robust character, while other varieties can offer greener, more herbaceous or fruit-led profiles.

The olive groves are managed using organic production practices, with native vegetation, green areas and biological corridors supporting biodiversity around the trees. This approach reflects the family's interest in maintaining the ecological balance of the land while producing high-quality olives.

Through careful variety selection and a strong connection to Mendoza, Zuccardi has helped establish Argentine extra virgin olive oil as a product with its own identity. The range demonstrates how cultivar, climate and agricultural practice influence the character of the finished oil.
