Tasting Notes

Valdespino Vermouth Origen

This distinctive Spanish vermouth is crafted by Valdespino, one of Jerez's most historic wine producers with roots stretching back centuries. Built on a base of aged Oloroso and Moscatel wines, it showcases the house's deep expertise in fortified wine production.

A blend of traditional botanicals including wormwood, gentian and dried Seville orange brings complexity and balance. The result is a wine-led vermouth that combines mature sherry character with citrus freshness, spice and gentle bitterness.

Tasting Profile:

  • Nose: Rich aromas of caramelised citrus, warming spice and mature sherry rise from the glass.
  • Palate: The palate is full and layered, combining fresh citrus, gentle spice and complex wine character.
  • Finish: A long, smooth finish carries delicate oak bitterness and lingering depth.

Occasion & Buyer Profile

An excellent choice for aperitif occasions, dinner parties and relaxed evenings when a classic vermouth deserves centre stage. Its wine-led style makes it particularly rewarding for those who enjoy sherry and fortified wines.

Food Pairing

Food Pairing Suggestions

Here are a few serving suggestions and pairing ideas to help you get the most from this vermouth, whether you’re enjoying it with food or simply savouring it on its own.

Iberico pork with roasted peppers and smoky paprika is an excellent match because the rich meat complements the vermouth's mature sherry character. The citrus and spice elements cut through the richness, while the gentle bitterness keeps the pairing balanced. Serve lightly chilled over ice.

Aged Manchego with quince paste and toasted almonds creates a classic Spanish pairing. The nutty cheese mirrors the oxidative character of the wine, while the citrus freshness prevents the combination from feeling heavy. Serve as part of an aperitif spread.

Meet The Producer

Meet The Producer Behind The Bottle

A brief look at the producer’s heritage and winemaking approach.

Valdespino

Valdespino is one of the oldest and most prestigious Sherry producers in Spain, with a history dating back to the 13th century. Based in Jerez de la Frontera, the house has played a defining role in the development of traditional Sherry production and is recognised for its commitment to craftsmanship, heritage and long ageing.

The winery’s origins are linked to the Valdespino family, who began cultivating vineyards in Jerez following the Christian reconquest of the region. Over centuries, the house developed a reputation for exceptional fortified wines, becoming one of the few producers to maintain traditional methods such as fermentation in oak casks and the use of historic solera ageing systems.

Today, Valdespino continues to produce some of Jerez’s most distinguished Sherries, including single-vineyard and long-aged expressions. With its historic cellars, carefully maintained soleras and dedication to traditional techniques, the house remains a benchmark for authentic, terroir-driven Sherry.
