Gonzalez Byass Apostoles VORS 30 Year Old Palo Cortado

Hand-crafted from the finest sun-ripened grapes, expertly blended and then matured in oak casks for a minimum of 30 years, the Rare Old Solera sherries are a true expression of some of the world’s finest and rarest wines.

  • It is an interesting wine with a elegant and delicate nose similar to an amontillado with notes of concentrated fruits
  • The palate is complex and intense with notes of caramel, mature wood, nuts and candied orange peel

Chill before serving the Gonzalez Byass Apostoles VORS 30 year old. Ideally pour into a small wine glass.

Pair with foie gras, mature cheeses and red meats.

This sherry is a blend of 87% palomino and 13% pedro ximenez. Only the juice that runs freely and the first press must of the palomino is used for this wine. Following with fermentation and fortification to 20% abv before entering the Palo Cortado Solera. Strong pressing of the pedro ximenez, fermentation and fortification to 15% abv before entering the PX solera.

After ageing separately for 12 years, blending of the two takes place before entering the Apostoles Solera where it spends a further 18 years making it a grand total of more than 30 years of ageing.
