Valdespino

Valdespino is one of the oldest and most prestigious Sherry producers in Spain, with a history dating back to the 13th century. Based in Jerez de la Frontera, the house has played a defining role in the development of traditional Sherry production and is recognised for its commitment to craftsmanship, heritage and long ageing.

The winery’s origins are linked to the Valdespino family, who began cultivating vineyards in Jerez following the Christian reconquest of the region. Over centuries, the house developed a reputation for exceptional fortified wines, becoming one of the few producers to maintain traditional methods such as fermentation in oak casks and the use of historic solera ageing systems.

Today, Valdespino continues to produce some of Jerez’s most distinguished Sherries, including single-vineyard and long-aged expressions. How is this sherry made?

Crafted from 100% Palomino grown in the Marcharnudo Alto vineyard, Inocente undergoes extended biological ageing under flor, developing savoury aromatics, saline minerality and lifted freshness. The vineyard’s chalk‑rich soils contribute clarity, tension and a distinctive savoury edge.

Aged for around ten years, Inocente is one of the few Finos still produced using traditional methods, including fermentation in oak casks. This long maturation creates a Fino with exceptional depth, complexity and structure while retaining remarkable freshness.
