Food Pairing

Food Pairing Suggestions

Here are a few serving suggestions and pairing ideas to help you get the most from this wine, whether you’re enjoying it with food or simply savouring it on its own.

Exceptional with blue cheeses such as Stilton, Cashel Blue, Roquefort, Gorgonzola and Saint Agur. The wine’s richness, structure and floral lift complement buttery textures and piquant flavours, creating a classic and indulgent pairing.

For sweet pairings, choose desserts that echo the wine’s dark‑fruit depth: flourless chocolate cake, black‑forest gâteau, spiced berry compote or dark‑chocolate truffles. These flavours mirror the wine’s intensity without overwhelming its structure.

This vintage is ideal for Christmas entertaining and winter celebrations. It appeals to buyers who appreciate long‑ageing fortified wines, collectors building verticals and anyone seeking a benchmark expression from a top vintage.

FAQ's For Taylors Vintage Port 2007 75cl

What was the growing season like for this year?

The 2007 growing season was preceded by a wet winter that replenished water reserves after four hot, dry years.

The humid conditions continued into spring and early summer with lower than average temperatures combined with periods of rain. There were no significant periods of intense heat during the summer months. The first two weeks of September saw constant daily temperatures of between 35ºC and 38ºC.

These warm and dry conditions brought the crop to perfect maturity, advancing the production of sugar and phenolics while retaining the excellent natural acidity resulting from the relatively cool summer. As a result the harvest produced perfectly balanced musts, producing a stylish and elegant vintage port. A wine full of vitality, with a superb fresh concentrated fruit character.

How is this Port wine made?
  1. Traditional Douro varieties such as Touriga Nacional, Touriga Franca and Tinta Roriz are foot‑trodden in lagares.
  2. Fermentation in traditional lagares preserves structure and aromatics.
  3. Extended ageing in bottle allows the wine’s tightly woven tannins and floral complexity to emerge.
What makes the 2007 vintage notable?

2007 is widely regarded as one of the standout “modern” vintages of the 21st century. It is celebrated for producing wines that combine deep concentration and power with freshness, elegance, and vibrant fruit expression. It also marked the first broadly declared vintage since 2003, with nearly all major Port houses releasing wines from this year, confirming its exceptional quality.

Key reasons the 2007 Vintage Port is notable:

  • Excellent weather conditions: A wet winter replenished water reserves, followed by a mild growing season and a perfectly timed warm, dry autumn, allowing grapes to reach full ripeness with strong natural balance.
  • Cooler summer influence: Compared with the hotter 2003 vintage, 2007’s relatively cooler conditions helped preserve freshness and acidity, avoiding overly jammy or overripe styles.
  • Ideal harvest window: A well-timed sunny period in September and October enabled optimal phenolic ripeness, especially for key varieties like Touriga Nacional and Touriga Franca.
  • Power with elegance style: Wines show intense black fruit (blackberry, raspberry) and firm tannins, but with a more refined, approachable structure than many earlier “blockbuster” vintages.
  • Exceptional ageing potential: Built for long-term cellaring, many 2007 Vintage Ports are expected to develop beautifully over 20–50+ years.
  • Critical acclaim: The vintage received very high ratings across major critics, with some wines achieving perfect or near-perfect scores.
  • Strong producer performance: Leading houses such as Taylor’s, Graham’s, Dow’s, Fonseca, Warre’s, and Niepoort all produced highly regarded wines.
  • High demand despite timing: Released during the global financial crisis, the vintage still sold out quickly due to strong critical reputation and limited production.

How should this vintage be served?
  • Slightly cool, around 16°C.
  • Decanting removes sediment and opens the aromatics. Read how to Decant Vintage Port.
  • Serve in a small tulip‑shaped glass to focus aromatics and sweetness.
