De Bortoli Noble One Botrytis Semillon
First released in 1982, Noble One has become one of the most celebrated sweet wines in the world, winning hundreds of gold medals and trophies both in Australia and internationally.
The Semillon grapes are sourced from vineyards known for producing exceptional botrytis fruit in the right conditions. Each bunch is hand-harvested, gently pressed, and fermented slowly, a process that can take from three weeks up to six months. Around 80–90% of the wine then matures in French oak for 12 months at a steady 15°C, while the remainder rests in tank to preserve freshness.
- The result is a rich and expressive wine, offering aromas of nectarine, apricot, mandarin peel, and a touch of vanilla
- On the palate, layers of botrytis character emerge - citrus, pineapple, and butterscotch
- Creating a long, silky finish
- With cellaring potential of 15–20 years, it will continue to develop complexity over time.
