This process extracts colour, structure and aromatic depth, creating a white wine capable of sustaining long oak ageing. Fermentation is halted with grape brandy to create the fortified wine.

The final blend is composed of wines aged in oak casks for an average of thirty years. Each component contributes layers of dried fruit, nutty richness and warm spice. The resulting wine expresses the full character of long cask maturation - refined, complex and beautifully balanced.
