What does VSOP mean in cognac?

VSOP stands for Very Superior Old Pale, meaning the youngest eau-de-vie in the blend has been aged for a minimum of four years in oak barrels. In practice most houses age their VSOP expressions considerably longer, this Courvoisier VSOP contains eaux-de-vie aged up to 12 years. How should Courvoisier VSOP be served?

Courvoisier VSOP is at its best served neat at room temperature in a tulip-shaped glass, which concentrates the jasmine and stone fruit aromas. Allow it to rest for a minute before tasting. Adding two or three drops of still water can open up the aromas further and soften the palate, particularly for those new to neat spirit drinking. Each component is distilled in traditional Charentais copper pot stills to preserve aromatic purity, then matured for up to 12 years in Courvoisier's proprietary oak barrels. The extended ageing creates the signature gingerbread spice and silky finish that defines this expression.
