Chateau De Montifaud

Chateau de Montifaud is a family-owned Cognac producer based in the heart of the Cognac region, France, established in 1866. Now run by the sixth and seventh generations of the Vallet family, the estate is known for its strong commitment to tradition, estate-grown production and long-term ageing philosophy.

The vineyards are located primarily in the Grande Champagne and Petite Champagne crus, where chalk-rich soils contribute to elegance and ageing potential. They produce Cognacs exclusively from its own vineyards, distilling in-house and ageing in French oak to create spirits defined by finesse, balance and purity of fruit.

How is it made?

This Rouge Vieux is crafted using fresh grape must blended within hours of pressing with Cognac aged at least one year. A traditional method discovered by accident in 1589. This early fortification preserves natural sweetness while capturing the purity of the fruit.

After blending, the Pineau matures in French oak barrels for many years, allowing the components to harmonise. Extended ageing softens the structure, deepens flavour and adds complexity, resulting in a Pineau that is both rounded and richly expressive.

What does “Rouge Vieux” mean?

Rouge means made from red grapes. Vieux means “aged” (longer oak maturation for deeper complexity). This results in a richer, more developed style than younger Pineau.
