A beautifully balanced medium-sweet Sherry from Jerez de la Frontera, Spain. Crafted from a harmonious blend of 90% Oloroso made from Palomino grapes and 10% Pedro Ximenez, this expression spends five years ageing together in traditional bota casks to develop its distinctive depth and complexity.

The combination of rich, nutty Oloroso and naturally sweet Pedro Ximenez creates a refined Sherry with excellent balance between savoury character, fruit richness and refreshing brightness.

Diatomists

Diatomists is a wine project focused on expressing the vineyard terroir of the Jerez region in southern Spain. Founded by three friends with backgrounds in the wine trade, the project works with local growers to highlight the importance of vineyard origin in traditional sherry production.

The vineyards lie on the famous albariza soils of Jerez - bright white limestone-rich soils formed from ancient marine sediments. These soils retain winter rainfall and sustain vines through the region’s hot, dry summers, producing grapes with concentration and a distinctive saline minerality.

Diatomists uses traditional sherry ageing methods including biological ageing under flor and oxidative ageing in oak barrels. Wines are often selected from individual barrels or vineyard sites to highlight the character of each terroir.

The name "Diatomists" pays tribute to the artisans skilled in the intricate art of diatom arrangement. Diatoms, single-cell algae, create intricate glass shells around themselves. Remarkably, five million years ago, the region of Jerez, where this exceptional sherry originates, was underwater.

I enjoy this one for its deep amber colour and the way the aromas of walnuts, marmalade and sultanas come alive in the glass. On the palate it’s velvety and layered, with apricot and walnut flavours leading into a tangy, fresh finish that keeps it lively without being heavy.
