The high summer and autumn temperatures were mitigated by our cellars’ ability to heat regulate heat naturally. The spring-like winter meant that the yeasts formed their protective white mantle in February, producing a pale-yellow wine with a sharp aroma with hints of citrus, spices, grass, leaven, almonds, chalk and talcum powder.
